  • 2 tbsp olive oil Rich and full of flavor
  • 2 cloves garlic, minced For a pungent kick
  • 1 tsp paprika Adding depth and color
  • ½ tsp salt Enhancing all other flavors
  • to taste black pepper For subtle warmth
  • ¼ cup honey The star of the dish for sweetness
  • 1–2 tsp chili flakes or sriracha Bringing the heat
  • 1 tsp apple cider vinegar Optional for balance

For the Grain Base and Veggies

  • 1 cup uncooked rice, quinoa, or cauliflower rice For the base
  • 1 cup broccoli florets Crisp and fresh
  • 1 cup sliced carrots Vibrant and sweet
  • 1 cup chopped bell peppers Colorful and crunchy
  • sliced avocado Creamy and nutritious
  • sesame seeds For a nutty finishing touch
  • chopped green onions For freshness and flavor
  • lime wedges For a zesty squeeze

Instructions

Marinate Chicken

  • In a bowl, mix together the olive oil, minced garlic, paprika, salt, and pepper until well combined. Coat the chicken evenly with this mixture and let it sit for 15 minutes.

Cook Chicken

  • Heat a skillet over medium-high heat and add the marinated chicken. Cook each side for about 5–7 minutes until the chicken is golden brown and cooked through. Remove from the skillet and let it rest for a few minutes before slicing.

Make Hot Honey Glaze

  • In a small saucepan, warm the honey over low heat. Stir in chili flakes or sriracha along with apple cider vinegar if using. Simmer for 2–3 minutes until combined, then remove from heat.

Prepare Grain Base

  • Cook your choice of rice, quinoa, or cauliflower rice according to package instructions. Once cooked, fluff it with a fork and set aside.

Cook Veggies

  • Steam or roast the broccoli, sliced carrots, and chopped bell peppers until they reach a tender-crisp texture.

Assemble Bowls

  • To serve, layer your grain base in a bowl, followed by a generous amount of cooked veggies and the sliced chicken on top. Drizzle your homemade hot honey glaze over everything and add optional toppings like sliced avocado, sesame seeds, and a sprinkle of chopped green onions. Serve with lime wedges.

Notes

Marinating the chicken enhances flavor significantly. You can simplify by using pre-cooked grains. Add fried onions or nuts for crunch. Adjust chili flakes or sriracha for desired heat. Covering veggies while cooking helps retain color and crispness.
