Instructions

Preparation

  • In a medium pot, pour the low-sodium chicken broth and bring it to a rolling boil.
  • Gradually whisk in the stone-ground grits, stirring continuously to ensure smoothness.
  • Lower the heat, covering the pot partially. Allow the grits to cook for 20-25 minutes, stirring occasionally.
  • Once the grits are tender, stir in the heavy cream and 4 tablespoons of unsalted butter. Season with salt and pepper to taste.

Cooking the Shrimp

  • In a separate skillet over medium heat, melt 2 tablespoons of butter. Sauté minced garlic until fragrant, about 1 minute.
  • Add the seasoned shrimp and cook until they are pink and opaque, approximately 3-4 minutes.

Serving

  • Present the creamy grits in bowls, topping them with the sautéed shrimp. Garnish with chopped green onions.
