Ingredients

For the Rolls

  • 2 cups shredded mozzarella cheese
  • 2 oz cream cheese Can be substituted with Greek yogurt for a lighter option.
  • 2 large eggs
  • 1 cup almond flour Coconut flour can be used, but reduce the quantity to 1/4 cup.
  • 1 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • pinch salt

For the Filling

  • 1 lb thinly sliced ribeye steak Can be substituted with flank steak, chicken, or turkey.
  • 1 cup bell peppers, sliced Use red, green, or a mix.
  • 1 cup onion, sliced
  • 1 cup provolone cheese, shredded
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

Preparation

  • In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 30-second intervals, stirring in between, until fully melted and combined.
  • In a separate bowl, whisk together almond flour, baking powder, garlic powder, onion powder, and salt.
  • Add the melted cheese mixture to the dry ingredients. Mix well. Then, add the eggs and stir until a cohesive dough forms.
  • Preheat your oven to 400°F (200°C) to prepare for baking.
  • Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1/4 inch thick.
  • Cut the rolled dough into squares, roughly 4x4 inches.

Cooking the Filling

  • In a skillet over medium heat, add olive oil. Sauté the onions and bell peppers until softened, about 5-7 minutes.
  • Add the sliced steak to the skillet. Season with salt and pepper. Cook until the steak is browned and cooked through, about 5-6 minutes.
  • Remove from heat and stir in the provolone cheese until melted.

Assembly and Baking

  • Place a generous spoonful of the steak and cheese mixture onto each square of dough.
  • Carefully fold the corners of the dough over the filling and pinch to seal.
  • Place the rolls seam-side down on a baking sheet lined with parchment paper. Bake for 15-20 minutes until golden brown.

Notes

These rolls freeze beautifully. Wrap individually in plastic wrap and place in a freezer-safe bag. Reheat in an oven or toaster oven until warmed through. Serve with low-carb dipping sauces like marinara or ranch dressing.
