Instructions

Preparation

  • Rinse the raw shrimp under cold water. If necessary, peel and devein. Pat dry with a paper towel.
  • In a medium bowl, combine the shrimp and fresh lime juice, ensuring they are fully submerged. Cover and refrigerate for about 2 hours to 'cook' in the lime juice.
  • While the shrimp marinates, dice the mango, cucumber, red onion, and jalapeño. Set aside.
  • After marination, drain some lime juice from the shrimp but keep a small amount for added flavor. Add the diced mango, cucumber, red onion, cilantro, and jalapeño to the shrimp. Gently toss to combine.
  • Taste and season with salt and pepper as desired. Adjust lime juice for acidity if needed.
  • Serve immediately with crispy tortilla chips for dipping.
