Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the bite-sized chicken pieces with the minced garlic, olive oil, oregano, basil, smoked paprika, salt, black pepper, and optional red pepper flakes. Toss until the chicken is well coated.
  • Add the sliced zucchini, halved cherry tomatoes, and thinly sliced red onion to the bowl and mix gently until all vegetables are coated.
  • Transfer the chicken and vegetable mixture to a greased baking dish, spreading it out evenly.

Baking

  • Sprinkle the shredded mozzarella cheese evenly over the top, followed by the grated Parmesan cheese.
  • Cover the baking dish with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
  • Let it cool for a few minutes before garnishing with freshly chopped parsley.

Notes

Ensure chicken pieces are cut evenly for uniform cooking. Do not overcrowd the baking dish.
