Instructions

Preparation

  • In a mixing bowl, whisk together olive oil, minced garlic, fresh lemon juice, dried oregano, paprika, salt, and freshly ground black pepper until well combined.
  • Add the chicken tenders to the bowl, ensuring they’re well coated in the marinade. Cover with plastic wrap and marinate for at least 15 minutes at room temperature or refrigerate for up to two hours.

Cooking

  • Preheat your skillet over medium-high heat and drizzle a bit more olive oil to coat the pan.
  • Once the skillet is hot, place the marinated chicken tenders in a single layer and cook for 4-5 minutes until golden-brown on one side.
  • Flip the chicken tenders and cook for another 4-5 minutes, or until the internal temperature reaches 165°F (75°C).
  • Remove the chicken from the skillet and let it rest for two minutes before serving.

Serving

  • Serve the chicken garnished with fresh parsley and lemon wedges for an extra splash of brightness.

For a healthier option, consider baking the chicken tenders instead of pan-frying. Preheat your oven to 400°F (200°C), place the marinated chicken on a lined baking sheet, and bake for 20 minutes or until fully cooked. Ensure to let the chicken marinate for enhanced flavor.
