Ingredients

Main Ingredients

  • 8 slices good white bread (day-old bread is perfect, crusts removed) Soft and airy, perfect base.
  • 8 oz fresh mozzarella (sliced thick, about 1/4 inch) Creamy and rich, main cheese.
  • 3 large eggs Binding agent for richness.
  • 1/2 cup whole milk Adds creaminess to the egg mixture.
  • Salt and freshly ground black pepper Essential for flavor enhancement.
  • Vegetable oil (enough for about 1 inch deep) For crispy outer layer.
  • 4-6 fresh basil leaves Aromatic and refreshing.
  • 2-3 slices prosciutto or ham Adds a savory depth.
  • a few sun-dried tomatoes, chopped Brings sweetness to the dish.
  • A drizzle of good olive oil Finishing touch for flavor.
  • a pinch dried oregano Ties all flavors together.

Instructions

Preparation

  • Lay out your slices of bread and pat the mozzarella dry with paper towels.
  • Create sandwiches by placing a thick layer of mozzarella between two slices of bread, layering in basil, prosciutto, or sun-dried tomatoes if desired.
  • In a shallow dish, whisk together the eggs, milk, salt, and freshly ground black pepper until smooth.

Cooking

  • In a large skillet, heat about 1 inch of vegetable oil over medium heat.
  • Dip each sandwich in the egg mixture, soaking for just a few seconds on each side.
  • Fry the sandwiches for 2-3 minutes on each side until golden brown and crisp.
  • Transfer to a paper towel-lined plate to drain any excess oil.

Notes

Ensure to pat the mozzarella dry to avoid soggy sandwiches. Pair with a salad or soup for a complete meal.
