  • Heat olive oil in a large pot over medium heat. Once hot, add the seasoned chicken breasts and cook until golden brown on both sides, approximately 5 minutes. Remove the chicken from the pot and set aside.
  • In the same pot, sauté the minced garlic and diced onion until fragrant, about 2 minutes.
  • Add the penne pasta, chicken broth, and Italian seasoning to the pot. Stir well to combine and bring to a simmer.
  • Return the browned chicken to the pot. Cover and cook until the pasta is al dente, about 10 minutes.
  • Stir in the grated Parmesan cheese until it melts and creates a creamy sauce.
  • Serve hot, garnished with additional cheese if desired.

Notes

To enhance flavors, consider marinating the chicken in Italian dressing for an hour before cooking. Add veggies like spinach or bell peppers for extra nutrition, and reserve some Parmesan for serving.
