Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 pinch salt

Wet Ingredients

  • ½ cup unsalted butter (melted)
  • ¾ cup raw honey
  • 2 large eggs
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tablespoon grated fresh ginger

Optional Glaze

  • 2 tablespoons honey
  • 2 tablespoons orange juice

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease your preferred baking pan.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, ground ginger, cinnamon, nutmeg, and a pinch of salt.
  • In another large bowl, combine melted unsalted butter, raw honey, and eggs. Whisk gently until well blended.
  • Stir in fresh orange juice, zest of two oranges, and grated fresh ginger into the wet ingredients.
  • Gradually fold in the dry ingredients to the wet mixture until just combined.
  • Pour the batter into the prepared baking pan and smooth the top with a spatula.
  • Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.

Finishing

  • If desired, brush the warm cake with the optional honey-orange glaze made by mixing honey and orange juice.
  • Allow the cake to cool for about 10 minutes in the pan before transferring it to a wire rack to cool completely.

Notes

For added flavor, consider using fresh grated ginger instead of powdered ginger. You can also add nuts for extra crunch. Store in an airtight container for up to three days, or freeze for longer storage.
