Instructions

Preparation

  • Place the chopped white chocolate in a sealable container. Have a strainer and spatula ready for later steps.

Cooking the Mixture

  • In a small saucepan, combine the unsalted butter and orange zest. Heat this mixture over medium heat and bring it to a boil for about 1 minute.
  • Carefully pour in the heavy whipping cream, allowing it to cook for an additional 1-2 minutes until small bubbles form on the surface.
  • Pour the hot butter and cream mixture over the chopped chocolate, using the strainer to catch the zest. Press down on the zest lightly to extract as much of the aromatic oils as possible. Let this sit for about 1 minute.

Mixing and Chilling

  • After letting it sit, add the orange extract and, if desired, the oil-based orange food coloring. Use a whisk to blend everything until mostly melted and completely smooth.
  • Transfer the mixture to your freezer and chill for about 1 hour, or until it’s firm enough to scoop and shape.

Shaping and Coating

  • Once firm, scoop out about 1 tablespoon of the mixture with a melon baller or spoon. Roll it gently between your hands to form a ball.
  • Roll the truffle in powdered sugar until it’s fully coated. Repeat with the remaining mixture, placing each truffle on a parchment-lined tray. Chill for an additional hour before serving.

Notes

For an enhanced flavor, try using freshly squeezed orange juice alongside the zest or experiment with different extracts like almond or vanilla. Use a double boiler for melting the chocolate if you're concerned about burning it directly in the container.
