Ingredients

Brownie Base

  • 1 box brownie mix (plus eggs, oil, and water as directed) Or use homemade batter.
  • ½ cup butter, melted For homemade batter.
  • 1 cup granulated sugar For homemade batter.
  • 2 large eggs For homemade batter.
  • 1 tsp vanilla extract For homemade batter.
  • cup unsweetened cocoa powder For homemade batter.
  • ½ cup all-purpose flour For homemade batter.
  • ¼ tsp salt For homemade batter.

Pecan Pie Filling

  • cup brown sugar
  • ¼ cup light corn syrup or maple syrup
  • 1 large egg
  • 1 tbsp melted butter
  • ½ tsp vanilla extract
  • 1 cup chopped pecans

Instructions

Preparation

  • Preheat oven to 350°F (175°C).
  • Grease a mini muffin pan (24 wells) liberally or use nonstick spray to ensure easy release.
  • Prepare the box mix as directed, or combine your homemade brownie ingredients in a mixing bowl, stirring until smooth and glossy.
  • Spoon 1 heaping tablespoon of brownie batter into each muffin cup, filling them about ¾ full.
  • Bake for 10–12 minutes, just until the tops set but are still soft and slightly undercooked.
  • Remove from the oven and use the back of a spoon or small cup to gently press down the centers, creating a well for your pecan pie filling.

Pecan Pie Filling

  • In a separate bowl, whisk together the brown sugar, corn syrup, egg, melted butter, vanilla, and chopped pecans until combined and slightly thickened.
  • Spoon 1–1½ tsp pecan filling into each brownie cup, letting it ooze into the well you created.
  • Return to oven and bake for an additional 10–12 minutes, until the filling is set and the edges are firm.
  • Cool in the pan for 10 minutes, then gently remove and allow them to cool completely on a wire rack.

Notes

These bites can be frozen and reheated easily. Avoid overbaking for the best texture.
