Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and green bell pepper. Cook until softened and lightly caramelized, about 8-10 minutes.
  • In a large mixing bowl, combine the ground beef, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Add the sautéed onions and peppers, and the shredded provolone cheese. Mix until well combined.
  • Transfer the meat mixture onto a lined baking sheet or into a loaf pan. Shape it into a loaf shape.
  • Sprinkle the shredded mozzarella cheese generously over the top.
  • Place the meatloaf in the oven and bake for 45-55 minutes until the internal temperature reaches 160°F (71°C).
  • Remove from the oven and let it rest for about 10 minutes before slicing.

Notes

For extra flavor, consider adding sautéed mushrooms. You can also swap provolone for cheddar or gouda. Customize veggies to accommodate picky eaters.
