Ingredients

For the fries

  • 2 lbs frozen thick-cut fries Alternatively, use 3 lbs of russet potatoes
  • 2 tbsp olive oil For fresh fries
  • 1 tsp salt
  • 1/2 tsp garlic powder

For the steak and veggies

  • 1.5 lbs ribeye or sirloin, sliced paper-thin Ask your butcher to do this!
  • 1 large onion, sliced thin
  • 1 large green bell pepper, sliced For that fresh crunch
  • 1 large red bell pepper, sliced Because color matters!
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper Optional but recommended for spice lovers

For the cheese sauce

  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk, warmed For creaminess
  • 8 oz American cheese, cubed Don’t judge, it melts perfectly!
  • 4 oz sharp cheddar, shredded For that extra sharpness
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

For garnish and serving

  • 1/4 cup fresh parsley, chopped For garnish
  • 2 green onions sliced For a fresh kick
  • Hot sauce For those who like to live dangerously!
  • Extra cheese for sprinkling Because more is more!

Instructions

Preparation

  • Preheat your oven to 450°F. If using frozen fries, spread them on a baking sheet and bake according to package directions until golden and crispy.
  • If using fresh potatoes, cut them into thick fries, toss with olive oil and seasonings, then bake for about 25-30 minutes, flipping once.

Cooking Veggies

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add sliced onions and cook for 5-7 minutes until caramelized.
  • Toss in the green and red bell peppers and let soften for another 5-6 minutes. Add minced garlic and cook for 1 minute until fragrant.
  • Season the mixture with salt and pepper, then transfer to a plate.

Cooking Steak

  • In the same skillet, add remaining olive oil over medium-high heat. Toss in sliced steak and season with salt, pepper, paprika, and cayenne.
  • Cook for 2-3 minutes, stirring frequently until just cooked through. Combine with the cooked veggie mixture.

Making Cheese Sauce

  • In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for about a minute.
  • Gradually whisk in warm milk, stirring to avoid lumps. Continue stirring until it thickens, about 3-4 minutes.
  • Remove from heat, whisk in American cheese until smooth, then add sharp cheddar, garlic powder, and onion powder, seasoning with salt and pepper to taste.

Assembly

  • Spread hot fries on a platter or individual plates. Top with steak and veggie mixture, then drizzle cheese sauce over all.

Serving

  • Garnish with parsley and green onions. Serve with hot sauce on the side and extra cheese for sprinkling.

Notes

Avoid overcrowding the baking sheet for fries. Adjust spices to taste. Store leftovers in an airtight container for up to three days.
