Preparation

  • Preheat your oven to 350°F (175°C) and toast the pecans on a baking sheet for 5–7 minutes until fragrant.
  • In a large mixing bowl, combine the toasted pecans, crushed graham crackers, brown sugar, corn syrup, vanilla extract, and a pinch of salt.
  • Mix until a sticky dough forms.
  • Using a tablespoon, scoop dough and roll it into 1-inch balls. Place on a parchment-lined baking sheet.
  • Refrigerate for about 1 hour or freeze for 20 minutes.
  • Melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals until smooth.
  • Dip each chilled ball into the melted chocolate, allow excess to drip off, and return to the sheet.
  • Chill the coated balls in the refrigerator for another 15–20 minutes until set.

Store in an airtight container in the refrigerator for up to a week, or freeze for up to 3 months. Serve after dinner or at holiday gatherings.
