  • 2 packs Savoiardi Sponge Fingers Boudoir biscuits can be used as a substitute.
  • 1/2 cup Chopped Pistachios Either raw or roasted can be used.
  • 1/4 cup Pistachio Paste For drizzling to enhance presentation.

Instructions

Preparation

  • Brew a cup of strong coffee and allow it to cool.
  • In a large mixing bowl, combine mascarpone cheese, double cream, and icing sugar. Beat until smooth and creamy, achieving a thick yet spreadable consistency (about 3-4 minutes).
  • Gently fold in the pistachio cream to create an even mixture.
  • Quickly dip each side of the sponge fingers into the cooled coffee.

Assembly

  • Layer coffee-soaked sponge fingers at the bottom of a serving dish.
  • Spread half of the mascarpone mixture over the sponge layer.
  • Repeat the layer with more soaked sponge fingers and the remaining mascarpone mixture.
  • Chill in the refrigerator for at least four hours or overnight.

Finishing Touch

  • After chilling, top with chopped pistachios and a drizzle of pistachio paste before serving.

Notes

For best results, use fresh ingredients at room temperature. Allow at least four hours or overnight for chilling for the best flavor.
