Ingredients

For the tart crust

  • 1 1/4 cups all-purpose flour Forms the buttery, delicate crust.

  • 1 large egg yolk Gives structure to the dough.

For the filling

  • 1/2 cup raspberry jam Provides a sweet, tangy layer.
  • 2 cups white chocolate, chopped For a creamy filling.
  • 1 cup heavy cream Adds richness to the filling.
  • 1/2 cup shelled pistachios, roughly chopped Adds crunch and color.
  • Fresh as needed raspberries for garnish Lends bursts of flavor and visual appeal.

Instructions

Preparation of Dough

  • Add the chilled, diced butter, and pulse until the mixture resembles coarse crumbs.
  • In a small bowl, mix the egg yolk and ice water together. Drizzle this mixture over the flour blend, pulsing until the dough just comes together.

Shaping and Chilling

  • Press the dough into individual tartlet pans. Prick the bases with a fork and place in the refrigerator for about 30 minutes to chill.

Baking the Tart Shells

  • Preheat the oven to 375°F (190°C). Bake the tart shells for 12-15 minutes until golden brown.
  • Remove and allow them to cool completely.

Making the Filling

  • Once the tart shells are cool, spread a layer of raspberry jam over the bottom of each shell.
  • Melt the white chocolate in a double boiler until smooth. Remove from heat and whisk in the heavy cream until blended.
  • Carefully pour the white chocolate mixture over the raspberry layer in each tart shell.
  • Refrigerate the tartlets until set, about 2 hours.

Garnishing and Serving

  • Before serving, sprinkle the chopped pistachios on top and add fresh raspberries.
