Instructions

Preparation

  • Core and chunk the pineapple into bite-sized pieces.
  • Slice the cucumbers into thin rounds.
  • If using red onion, slice it paper-thin and rinse in cold water.
  • Chop the mint, parsley or cilantro, and basil.

Dressing

  • In a small bowl, whisk together lime juice, honey, olive oil, salt, black pepper, and red pepper flakes.
  • Taste and adjust seasoning as needed.

Assembly

  • In a large bowl, toss together pineapple, cucumber, herbs, and red onion.
