  • to taste fresh herbs (like mint or parsley) Optional for garnish.

Instructions

Preparing the Carrots

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • In a large mixing bowl, toss the carrots with olive oil, maple syrup, cumin, smoked paprika, salt, and pepper.
  • Spread the seasoned carrots evenly across the lined baking sheet.
  • Roast the carrots for 25 to 30 minutes, flipping halfway through.

Making the Whipped Ricotta

  • In a food processor or using a hand mixer, blend ricotta, heavy cream, and lemon zest until smooth and airy.

Assembling the Dish

  • On a platter, spread the whipped ricotta as a base.
  • Artfully arrange the roasted carrots on top of the ricotta.
  • Drizzle with hot honey and garnish with fresh herbs if desired.
  • Serve warm or at room temperature.

Notes

Ensure the carrots are evenly sized for uniform roasting. Don’t overcrowd the baking sheet and flip the carrots halfway through roasting for even browning.
