Instructions

Preparation

  • Preheat the oven to 400°F (200°C) to get a lovely golden brown finish on your chicken.
  • Season the chicken breasts generously with salt and pepper on both sides.
  • Heat the olive oil in a large pan over medium-high heat. Add the chicken breasts and cook for about 3-5 minutes on each side until they are beautifully browned.
  • Transfer the chicken to a baking dish coated with cooking spray.

Making the Sauce

  • In a small bowl, combine the minced rosemary, melted butter, garlic, chicken broth, and lemon juice. Stir until well mixed.
  • Pour the rosemary butter sauce over the chicken breasts in the baking dish, ensuring the chicken is well covered.

Cooking

  • Bake the chicken in the preheated oven for about 25 minutes or until it reaches an internal temperature of at least 165°F (75°C).
  • Once baked, spoon the sauce from the bottom of the baking dish over the chicken to keep it juicy.

Finishing Touch

  • Sprinkle with chopped parsley for a fresh finish. Optionally garnish with lemon slices and rosemary sprigs.

Notes

For extra flavor, marinate the chicken in olive oil, minced garlic, and rosemary for a couple of hours before cooking. Feel free to add vegetables like asparagus or cherry tomatoes for a one-pan meal. Use a meat thermometer to ensure the chicken is cooked perfectly every time.
