Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and thinly slice the potatoes.
  • In a skillet, heat olive oil over medium heat and sauté chopped onion with sliced mushrooms until softened.
  • Add wilted spinach, garlic powder, thyme, salt, and pepper, mixing well.
  • Grease your pie dish with butter and layer half of the sliced potatoes at the bottom.

Assembly

  • Add the mushroom and spinach mixture on top of the potato layer.
  • Sprinkle cheese over the mushroom and spinach mixture.
  • Top with the remaining potato slices, seasoning with salt and pepper.

Baking

  • Place the pie in the preheated oven and bake for about 45-50 minutes or until the potatoes are tender and golden.

  • Allow the pie to cool for a few minutes before slicing and serving.
