Instructions

Preparation

  • Preheat your oven to 425 degrees F and line a large baking sheet with parchment paper.
  • Bring a large pot of salted water to a boil and add the Brussels sprouts. Cook them for about 8 to 10 minutes until bright green and tender.
  • Transfer the cooked Brussels sprouts to an ice bath to cool. Drain well once chilled.

Cooking

  • On the baking sheet, toss the blanched Brussels sprouts with olive oil, minced garlic, and thyme.
  • Flatten each Brussels sprout with the end of a small glass or mason jar.
  • Season the smashed sprouts with kosher salt and black pepper, then top with shredded mozzarella and Parmesan.
  • Bake in the preheated oven for about 20 to 25 minutes or until the bottoms are crispy and the cheese is melted and golden.
  • Garnish with freshly chopped parsley and serve warm.

Notes

If looking for healthier alternatives, consider nutritional yeast instead of cheese or avocado oil instead of olive oil. Store in an airtight container in the freezer for later use.
