Ingredients

S’mores Filling

  • 1 cup semi-sweet chocolate chips Melting into gooey pockets of chocolatey goodness.
  • 1 heaping cup marshmallow crème Adds essential marshmallow flavor and texture.

Instructions

Preparation

  • Preheat your oven to 350°F (177°C) and prepare an 8-inch square baking pan by lining it with parchment paper.
  • In a mixing bowl, cream together the softened butter and brown sugar using an electric mixer until smooth and creamy (about 2-3 minutes on medium speed).
  • Add the large egg and pure vanilla extract to the creamed mixture and blend until well combined.
  • In a separate bowl, whisk together the flour, graham cracker crumbs, baking powder, and salt. Gradually add this to the wet mixture, stirring just until combined.
  • Gently fold in the semi-sweet chocolate chips until evenly distributed.
  • Press half of the cookie dough into the bottom of the prepared pan, then spread the marshmallow crème evenly over this layer.
  • Drop spoonfuls of the remaining cookie dough over the marshmallow crème.
  • Bake in the preheated oven for 25-30 minutes, until the edges are lightly browned.

Cooling

  • Allow the bars to cool completely in the pan before using the parchment overhang to lift them out and cut into squares.

Notes

For an indulgent touch, drizzle melted chocolate over the top before serving. Optionally add mini marshmallows for a toasted look. Variations include using milk chocolate chips or peanut butter chips.
