Instructions

Cooking the Coconut Rice

  • Rinse the jasmine rice under cold water until the water runs clear.
  • In a saucepan, combine the rinsed rice, coconut milk, water, and a pinch of salt.
  • Bring to a boil, then reduce the heat, cover, and let it simmer for 15 minutes.
  • Keep covered for another 5 minutes to absorb flavors, then fluff with a fork.

Marinating the Chicken

  • In a mixing bowl, whisk together the maple syrup, sriracha, soy sauce, apple cider vinegar, minced garlic, and ginger.
  • Season the chicken pieces with salt and pepper, then toss in the marinade.
  • Let the chicken sit for about 10–15 minutes to meld flavors.

Cooking the Chicken

  • Heat olive oil in a skillet over medium heat.
  • Add the marinated chicken and cook for about 4–5 minutes on each side until golden and fully cooked.
  • Pour in the remaining marinade and let it simmer for an additional 2 minutes.

Serving the Dish

  • Lay a generous portion of coconut rice on a plate.
  • Top with the succulent chicken and finish with your choice of garnishes.

Notes

For best results, marinate the chicken for up to an hour. Adjust sriracha for spice level. Add vegetables like bell peppers for a heartier meal.
