Ingredients

For the filling

  • 1 sheet puff pastry tender and flaky
  • 1 cup fresh spinach, chopped bright and nutritious
  • 4 oz cream cheese, softened rich and creamy
  • 1/4 cup grated Parmesan cheese sharp and nutty
  • 1 each egg, beaten for the golden finish
  • to taste Salt and pepper to enhance all the flavors

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Roll out the puff pastry on a floured surface until slightly thinner and cut it into even squares.
  • In a bowl, combine chopped spinach, softened cream cheese, grated Parmesan, salt, and pepper. Mix until well blended.
  • Place a spoonful of spinach mixture in the center of each pastry square, avoiding overfilling.
  • Fold the pastry over to form a triangle and seal the edges with a fork.
  • Brush the tops of the pastries with the beaten egg.

Baking

  • Place the puffs on a baking sheet lined with parchment paper and bake for 15-20 minutes, until golden brown.
  • Let them cool slightly before serving.

Notes

For extra flavor, consider adding sautéed garlic or onion to the filling. Keep your pastry cold for better handling.
