Ingredients

For the Cookies

For the Strawberry Crunch Topping

  • 1 cup Golden Oreos (about 10 cookies) Crushed into fine crumbs.
  • 2 tbsp strawberry Jell-O powder (dry mix) Adds flavor and color.
  • 2 tbsp melted butter Combine with the Oreo crumbs.

Optional Vanilla Drizzle

  • ½ cup powdered sugar Confectioner's sugar for glaze.
  • 1-2 tbsp milk or cream Adjust for desired consistency.
  • ½ tsp vanilla extract For flavoring the glaze.

Instructions

Preparation

  • In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  • Add in the large egg, vanilla extract, and strawberry extract. If desired, add a few drops of pink/red food coloring.
  • Gradually blend the all-purpose flour, baking soda, and salt into the mixture.
  • Chill the dough in the refrigerator for 15-30 minutes if it's too soft.

Baking Cookies

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop the dough into balls (about 1.5 tablespoons each) and place them on the prepared baking sheet, spaced 2 inches apart.
  • Bake for 10-12 minutes, or until edges are set and slightly golden.

Preparing Crunch Topping

  • While the cookies cool, blitz the Golden Oreos in a food processor to make fine crumbs.
  • Mix in the strawberry Jell-O powder and melted butter until well combined.
  • Spread the Oreo mixture onto a baking sheet and bake at 300°F (150°C) for 5-7 minutes until set.

Assembly

  • Drizzle the cookies with the optional vanilla glaze made from powdered sugar, milk, and vanilla extract.
  • Sprinkle with the strawberry crunch topping and allow everything to set before enjoying.
