  • 1 cup kale, chopped Fresh kale, stemmed and chopped.
  • 1/2 cup feta cheese, crumbled Can substitute with goat cheese or omit for dairy-free.
  • 1/2 cup onion, diced Yellow or white onion works best.
  • 2 cloves garlic, minced Freshly minced for maximum flavor.
  • to taste salt and pepper Adjust according to personal preference.

Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat a splash of olive oil over medium heat.
  • Add the diced onion and minced garlic, and sauté until softened.
  • Once the onions and garlic are translucent, add the chopped kale, and cook until it wilts.

Mixing the Egg Mixture

  • In a separate bowl, whisk together the eggs, adding salt and pepper to taste.
  • Stir in the roasted sweet potatoes and crumbled feta cheese.

Cooking

  • Pour the egg mixture over the cooked kale and aromatics gently.
  • Allow to cook on the stovetop for about 3-4 minutes until the edges begin to set.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes until set and golden on top.
  • Let cool for a few minutes, then slice, serve, and enjoy.

Notes

For the best results, use fresh ingredients. Optionally, add herbs like thyme or rosemary. Leftovers can be stored in the refrigerator for 3-4 days or frozen for longer storage.
