Ingredients

Rice Base

Instructions

Cook the Rice

  • Rinse 1 cup of uncooked white rice in cold water until the water runs clear.
  • In a medium saucepan, combine the washed rice with 2 cups of water or chicken broth.
  • Bring to a boil, then reduce heat to low, cover, and let simmer for about 15 minutes until tender.

Brown the Meat

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Add 1 lb of ground beef or turkey, season with salt and pepper, and sprinkle in taco seasoning.
  • Cook for about 5-7 minutes, stirring occasionally until the meat is browned.

Mix in Beans and Corn

  • Drain a can of black beans and add to the skillet along with 1 cup of corn.
  • Stir for another 2-3 minutes until heated through.

Assemble Bowls

  • Layer cooked rice in each bowl.
  • Top with the meat mixture, then add diced tomatoes, shredded lettuce, and cheddar cheese.

Finish with Toppings

  • Drizzle each bowl with salsa and garnish with cilantro and lime wedges if desired.

Notes

Consider using high-quality taco seasoning or making your own blend for unique flavors. Avoid overcrowding the pan when browning meat for even cooking. Top with jalapeños, avocado, or sour cream for extra flair.
