Ingredients

For the Marinade

  • 1.5 pounds boneless skinless chicken thighs
  • 1 lime lime (juiced)
  • 3/4 teaspoon table salt
  • 3/4 teaspoon ground black pepper
  • 7 ounces plain Greek yogurt 1 container, approximately
  • 5 cloves garlic (minced)
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cayenne

Instructions

Marination

  • Rub the chicken thighs with salt, pepper, and lime juice to enhance the meat's flavor.
  • In a large bowl, combine Greek yogurt, minced garlic, minced ginger, ground cumin, smoked paprika, turmeric, and cayenne.
  • Mix these ingredients thoroughly, then add the chicken, ensuring each piece is well-coated.
  • Cover the bowl and refrigerate for a minimum of 6 hours, ideally up to 24 hours.

Cooking

  • Preheat the broiler or oven to high (450°F). Line a baking sheet with foil or parchment paper.
  • Arrange the marinated chicken on the baking sheet, ensuring pieces don't overlap.
  • Broil the chicken for approximately 15-20 minutes until the top is dry with charred edges.
  • Flip the chicken pieces and continue cooking for an additional 10 minutes until fully cooked at 165°F.
  • Serve hot.

Notes

For best flavor, marinate overnight. Experiment with extra spices like garam masala. For a smoky flavor, consider using a grill pan or outdoor grill.
