Ingredients

For the marinade

  • 1/4 cup honey sweet and viscous
  • 1/4 cup fresh lime juice about 2-3 limes, tangy and refreshing
  • 2 tablespoons soy sauce adding depth and umami
  • 1 tablespoon olive oil for moisture
  • 4 cloves garlic, minced imparting a robust flavor
  • 1 teaspoon ground cumin warming and aromatic
  • 1 teaspoon paprika providing a subtle smokiness
  • 1/2 teaspoon salt for seasoning
  • 1/2 teaspoon black pepper for a hint of spice

For serving

  • 4 pieces boneless, skinless chicken breasts about 1.5 pounds
  • 1 teaspoon chopped fresh cilantro for garnish
  • 1 whole avocado, sliced creamy and rich, for serving
  • 1 cup cooked rice fluffy and absorbent, for serving
  • to taste lime wedges for serving

Instructions

Marinating the Chicken

  • In a medium bowl, whisk together the honey, lime juice, soy sauce, olive oil, minced garlic, ground cumin, paprika, salt, and black pepper until well combined.
  • Place the chicken breasts in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is generously coated.
  • Seal the bag or cover the dish, and refrigerate for at least 30 minutes to 2 hours for the best flavor infusion.

Grilling the Chicken

  • Preheat your grill or grill pan over medium-high heat.
  • Remove the chicken from the marinade, letting any excess liquid drip off. Discard the leftover marinade.
  • Place the chicken on the grill, cooking for about 6-7 minutes on one side until grill marks appear.
  • Flip the chicken and cook for an additional 5-6 minutes, or until the internal temperature reaches 165°F (75°C).

Resting and Assembling

  • Once cooked, remove the chicken from the grill and let it rest for about 5 minutes.
  • To assemble, layer slices of the grilled chicken atop a bed of cooked rice. Top with avocado slices and a sprinkle of fresh cilantro.
  • Serve with lime wedges on the side.

Notes

For optimal flavor, marinate chicken overnight if time allows. Add bell peppers or red onions to the marinade for extra flavor. If you're short on time, pan-sear the chicken instead.
