Ingredients

Main Ingredients

  • 1 lb ground turkey (85 percent lean preferred) This lean protein cooks beautifully, absorbing all the flavors of the sauce.
  • 1 tbsp sesame oil (or olive oil) Adds a rich, nutty flavor that enhances the dish.
  • 1 small onion, diced For a touch of sweetness and depth.
  • 2 cups broccoli florets (fresh or frozen) Crisp and vibrant, packed with nutrients.
  • 1/2 cup shredded carrots Mildly sweet and adds texture.
  • 1 tsp orange zest (optional but recommended) Brightens up the dish with a citrusy aroma.
  • 1 tsp fresh ginger, grated (or 1/2 tsp ground ginger) Gives a warm, spicy kick that complements the teriyaki.
  • 2 cloves garlic, minced Adds an aromatic richness that’s impossible to resist.
  • 1/4 tsp red pepper flakes (optional for spice) For those who like a little heat.

Teriyaki Sauce Ingredients

  • 3/4 cup water (for teriyaki sauce) Needed to create the perfect teriyaki consistency.
  • 1/4 cup low-sodium soy sauce (or tamari for gluten-free) The star ingredient, bringing that beloved umami flavor.
  • 1 tbsp honey (or maple syrup) Balances out the salty soy sauce with sweetness.
  • 1 tbsp brown sugar Extra sweetness that caramelizes as it cooks.
  • 1 tbsp cornstarch (or arrowroot powder) Thickening agent for achieving the perfect sauce.
  • 1/4 cup water (to mix with cornstarch slurry) Helps to create a smooth sauce.

Instructions

Preparation

  • Make the Teriyaki Sauce: In a small saucepan over medium heat, combine 3/4 cup water, soy sauce, honey, brown sugar, garlic, and ginger. Stir thoroughly and bring to a light boil.
  • Prepare the Cornstarch Slurry: In a separate bowl, whisk together the cornstarch with 1/4 cup water to create a smooth slurry.
  • Thicken the Sauce: Slowly pour the cornstarch slurry into the saucepan, stirring continuously until the sauce thickens.

Cooking

  • Cook the Turkey: Heat sesame oil in a large skillet or wok over medium-high heat. Add diced onion and sauté for 2-3 minutes until softened.
  • Next, add the ground turkey, breaking it apart with a spatula, and stir until it’s fully browned and no longer pink.
  • Add the Veggies: Toss in the broccoli and shredded carrots, cooking for 3-4 minutes until the broccoli is tender yet crisp, and the carrots are vibrant.
  • Combine with Sauce: Reduce the heat to low and pour in the prepared teriyaki sauce, stirring to coat all the ingredients evenly. Let it simmer for 2-3 minutes.
  • Finish the Dish: If using, sprinkle in the orange zest now and season with salt and pepper to taste.
  • Serve: Plate your Teriyaki Ground Turkey with Broccoli over a base of steamed rice, cauliflower rice, or noodles. For an extra touch of flavor, garnish with sesame seeds, chopped green onions, or crushed peanuts.

Notes

Add More Veggies: Feel free to throw in other vegetables like bell peppers, snap peas, or zucchini for texture and color. Make it Spicy: For those craving heat, increase the red pepper flakes or add a dash of your favorite hot sauce. Prepped Ahead: You can make the teriyaki sauce ahead of time and store it in the fridge for easier prep during busy weeknights.
