Preparation

  • In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  • In a separate bowl, combine the mashed bananas, crushed pineapple (including juice), sunflower oil, eggs, and vanilla extract until creamy.
  • Gradually fold the wet ingredients into the dry mixture using a spatula.
  • Stir in the toasted macadamia nuts and coconut flakes until evenly distributed.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking
