Instructions

Preparation

  • Cut the chicken in half lengthwise to create 4 thin pieces for faster cooking.
  • Generously season both sides of the chicken breasts with salt and pepper.

Cooking

  • In a large skillet, heat the olive oil and butter over medium heat. Carefully add the seasoned chicken and cook on each side until golden brown and the internal temperature reaches 165°F. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the chopped onion and sauté until it turns translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute for extra flavor.
  • Stir in the chopped sun-dried tomatoes along with the Italian seasoning. Mix everything well.
  • Slowly whisk in the chicken broth followed by the heavy cream and grated Parmesan cheese. Bring the sauce to a gentle simmer and let it thicken for a few minutes. Taste and season with salt and pepper as necessary.
  • Fold in the baby spinach, allowing it to wilt into the creamy sauce.
  • Place the sautéed chicken back into the skillet, spooning the luscious sauce over the top. Cook for an additional minute or two to warm through.
  • Plate the Tuscan Chicken hot, and garnish with fresh parsley or basil if desired.

Notes

For added flavor, you can marinate the chicken in Italian herbs, olive oil, and lemon juice for at least an hour before cooking. You can also substitute half and half for a lighter option or add crushed red pepper flakes for a bit of heat.
