Instructions

Preparation

  • In a large pot, heat a drizzle of olive oil over medium heat.
  • Add the chopped onion, minced garlic, diced carrot, and celery. Sauté until softened, about 5-7 minutes.
  • Introduce the diced tomatoes and broth, followed by the Italian herbs. Bring to a boil.
  • Once boiling, reduce to a simmer for about 10 minutes until the vegetables are tender.
  • Stir in the ravioli and spinach or kale, cooking for an additional 5-7 minutes until the ravioli is tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with grated Parmesan cheese.

Notes

To enhance flavor, add red pepper flakes or lemon juice. For variations, use leftover roasted vegetables or fresh herbs. Cook ravioli separately to prevent overcooking.
