Ingredients

For the Cauliflower

  • 1 large head cauliflower (leaves trimmed, core intact)
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • to taste Salt & pepper

For the Spicy Sriracha Honey Glaze

  • 3 tbsp honey
  • 2 tbsp Sriracha Adjust to taste
  • 1 tbsp soy sauce or tamari
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tbsp melted butter or sesame oil
  • 1 clove garlic, minced

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking dish with foil or parchment paper.
  • Rinse the cauliflower head and pat it dry. Drizzle with olive oil, then sprinkle with garlic powder, salt, and pepper, rubbing it into the cauliflower evenly.

Roasting

  • Place the cauliflower in the prepared dish and roast uncovered for 35–40 minutes until tender and golden-brown.

Making the Glaze

  • In a separate bowl, mix the honey, Sriracha, soy sauce, vinegar, minced garlic, and melted butter until smooth.

Final Roasting

  • Remove the cauliflower from the oven and brush generously with the spicy glaze. Return it to the oven for another 10–15 minutes, basting once more halfway through.

Serving

  • The cauliflower is ready when deeply golden and dripping with the glaze. Garnish with chopped cilantro, green onions, sesame seeds, or lime wedges.

Notes

This dish is delicious hot or cold. Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze portions.
