Preparation

  • Wash the zucchini thoroughly and slice them lengthwise into thin strips.
  • Lay the slices on paper towels, sprinkle lightly with salt, and let them sit for 10-15 minutes to draw out excess moisture.
  • Pat the slices dry with another paper towel after 10-15 minutes.

Cooking the Turkey Mixture

  • In a large skillet, heat olive oil over medium heat.
  • Add diced onions and minced garlic, sauté until translucent and aromatic (about 3-4 minutes).
  • Add ground turkey, break apart with a spoon, and cook until browned and fully cooked through (about 5-7 minutes).
  • Season the mixture with Italian seasoning, salt, and pepper, then stir in the marinara sauce and let it simmer for 5 minutes.

Layering

  • In a baking dish, start with a thin layer of the turkey and sauce mixture at the bottom.
  • Layer the sliced zucchini on top, ensuring they cover the base evenly.
  • Add dollops of ricotta cheese over the zucchini, followed by a sprinkle of mozzarella.
  • Continue layering from turkey to zucchini to cheese until all ingredients are used, finishing with mozzarella and sprinkling Parmesan on top.

Baking

  • Preheat your oven to 375°F (190°C).
  • Cover the baking dish with foil and place it in the preheated oven, baking for about 30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
